How have you all been?
This one is special & was staple in our kitchen since my childhood. It used to make a place in our meal plates almost 2 to 3 times a week. Proud Goan from my dad's side, my grandmother used to make all those quiet authentic and mouthwatering Goan delicacies and nothing, absolutely nothing could beat that magical aroma and delicious taste which we used to linger on.
Goa is this beautiful state in India, always cheerful, lots of beaches, beautiful churches, amazing temples, mouthwatering food heritage and all vibrant youthful energy. I am fortunate to have that first hand experience of all authentic Goan food even after staying so far away from the actual place as my father shifted to Mumbai much before my birth along with my grandparents for his work and then got married to my mom in Mumbai itself. Since then Mumbai became home for our family. But I am always thankful to my Grandmother to bring Goa in that little kitchen of ours in Mumbai.
Surmai Rava Fry is classic Goan dish where Surmai is marinated with simple spice paste and then coated with samolina to shallow fry it which makes it crispy outside and flavourfully juicy inside.

Cook Time: 10 mins
Servings: 3
Ingredients:
Surmai (Kingfish) pieces : 3
Ginger Garlic Paste : 2 tsp
Turmeric powder : 1/2 tsp
Red Chili powder : 2 tsp
Kokum (Garcinia Indica) Petals : 6-7
Salt 2 tsp
Semolina (Rava)
Oil to Shallow fry
Lets Get Cooking :
Thoroughly wash all the Kingfish pieces and set aside on plate.
Soak kokum petals in warm water for 5-10 minutes and then extract all the juice from them by squeezing. We will need this sour extract for marination.
In a bowl or small plate, mix Turmeric Powder, Red chili Powder, Salt & Ginger Garlic Paste along with Kokum Extract. Make a good mix.
Marinate all fish pieces with prepared spicemix and keep aside for 25-30 minutes.
After 30 minutes of marination, heat some oil in Non Stick pan. Gently pick each marinated fish piece, coat it in Samolina from all the sides. Shallow fry our marinated and well coated kingfish pieces by flipping and cooking from both the sides allowing them to get cooked for 3-4 minutes on each side.
Our crispy from outside and deliciously juicy from inside Kingfish (Surmai) rava fry is ready to get served.
How We can Serve this:
1. While in Goa, having a piping hot fish curry with simple plain steamed rice served with such amazing Rava fish fry as sides is so common.
2. I also love to eat this beauty with simple plain daal fry or dal khichadi as it adds so much flavour to that whole meal.
3. Kids love to eat it as it is and it really is quiet filling for them.
About ingredients
Kokum (Garcinia indica) - a must ingredient in most of Goan cooking as it fives that burst of flavor to Goan cooking, taking the dish to next level. It is also fondly called as Grandma's cure to acidity.
Rest of the ingredients are simple day to day spices available in any Indian kitchen.
Substitute for kokum :
While its easily understandable that kokum might not is easily available all around the world, sometimes not even in Indian stores across the countries, many people substitute them with easily available Lemon juice. It tastes amazing too.
