Hello Everyone...
Every now and then many of us face this "Leftovers" situation in our kitchens. My kitchen is no different. Its quiet regular and its no problem as we really can not measure the food that everyone is eating on that particular day. The real problem is no one wants to eat that same food next day and it stays put in our refrigerator for few more days only to get thrown away as who anyways will eat food that is 2 or 3 days old.
In my household, I try to finish it next day itself by giving it some twist and turning it into something completely new and healthy as it can be. Rice is something that becomes more versatile when it becomes one day old, no kidding. You can give it such a lovely makeover by no one realizing. Spinach rice is always one such twist which is my favorite. So lets make it...
Prep Time: 10 mins
Cook Time: 15 mins
Servings: 2
Ingredients:
Left Over Rice 2 cups
10-12 Spinach Leaves
1 Onion
7-8 Garlic Cloves
2 Green Chilis
1 Carrot (optional)
Some whole spices
Cinnamon Stick 1/2 inch
Cloves 2-3
Black Peppercorns 4-5
Bay Leaves 2
Cumin Seeds 1 tsp
Powdered Spices
Cumin Powder 1 tsp
Garam Masala 1 tsp
Coriander Powder 2 tsp
Other Ingredients
Ghee / Unsalted Butter 2-3 tbsp
Salt to Taste
Lets Get Cooking:
Wash and Blanch Spinach leaves in boiling water for couple of minutes. Remove them directly in Ice cold water to prevent them from overcooking and their licious green color can be retained.
In a mixer grinder add Blanched & Cooled Spinach leaves along with Green Chilis and Garlic Cloves. Make a smooth puree and keep aside.
In a wide pan, add 2 tbsp of Ghee / Butter. Once ghee is hot add all whole spices listed above. Cook them till they start leaving beautiful aroma.
Add finely chopped Onion and saute till Onion gets translucent. Time to add cubed Carrots (If Using). Partially cover the lid leaving the space for steam to escape and cook till Carrots get little softer.
Once Carrots are little Softer open the lid and add all powdered spices and cook them on low flame for couple of minutes making sure they dont stick at bottom of pan.
Add Garlic Spinach puree made earlier and give everything a good stir. Cook till the mixture starts leaving oil from sides.
Add that leftover rice and mix gently till every last grain of rice gets covered with that beautiful Green color.
Add salt to taste and mix gently. Pour 2 tsp of ghee on the top and cover and cook for 5-6 minutes till all the goodness comes together.
Switch off the gas flame and serve hot with Boondi Raita and some papad as sides.
Tips:
You can surely use fresh cooked plain rice just by making sure to cool it completely before starting this recipe.
You can completely skip adding Carrots in this recipe if you do not have it or not like it.
Or you can do completely opposite by adding some extra veggies like Broccoli, Cauliflower florets, Corns or Baby Corns, Mushrooms etc to give this recipe a complete Healthier version.
Adding 2 Green Chilis made this one mild to medium spicy which my 7 year old could easily eat. You can adjust spice as per your and your families liking but if making for kids I will suggest do not increase spice level any more than this but feel free to even reduce it if for kids as I said before.
