Hello Everyone...
If we Maharashtrians decide to list our go to breakfast dishes then, that one Craving which will surely & proudly make a place in the top 5. That 1 dish we frequently and diligently cook every now and then is Kande Pohe. That super combination of Onion + Beaten Rice cooked together and served hot with a squeeze of Lemon and fresh chopped Coriander leaves making me drool over even at this very moment.
So without any further ado Lets get to the recipe:
Prep Time : 5 mins
Cook Time : 10 mins
Total Time : 15 mins
Servings : 2
Ingredients:
Thick Poha (Beaten Rice) 2 cups
Onion 1 finely Chopped
Green Chilis 2 (Chopped)
Groundnuts 1/2 small bowl
Curry leaves 4-5
Turmeric powder 1/2 tsp
Salt to taste
Sugar 1 tsp
Lemon 1/2
Mustard Seeds 1 tsp
Oil to cook
Lets Get Cooking:
Take Poha in one colander and sieve to remove all those tiny particles which might will create nuisance while eating that otherwise soft making.
Wash the sieved Poha in same Colander under running water and keep aside for 5 minutes to help Poha get soft and little puffed up.
Meantime heat 1 tbsp of Oil in kadai and add Mustard seeds. Allow them to splutter and then add Curry leaves.
Add finely chopped Onion along with Chopped Green Chilis. Saute till Onion gets soft and translucent.
Time to add Turmeric Powder, Salt and Sugar. Mix well.
Add Soaked Poha. Make sure to separate Poha grains randomly while adding to Onion.
Add groundnuts too and give everything a good mix. Cover Partially and cook for just 2-3 minutes.
After 2-3 minutes just open the lid and squeeze half a lemon in it. Give one final stir.
Switch off the flame and serve hot garnishing with finely chopped fresh Coriander leaves and a wedge of lemon at side.
Tips:
Do not proceed without sieving Poha in the beginning as you do not like those small tiny uncooked particles spoil your otherwise so soft Pohas while eating.
Always wash poha in colander and let all the water drain out. The water absorbed in Poha while washing is enough for them to get soft and puffed. Keeping poha in any extra water can make them super soggy and spoil all fun later.
You can also garnish with some freshly grated coconut along with Coriander leaves and it nothing but adds extra amaze to that even lovely taste.
