Hello Everyone.
How are you all? Now the Monsoon is setting in my part of the world and we have started getting some relief from the scorching heat, resulting in spending more time in kitchen than Summer. And then I decided to make my daughter's favorite Egg Pepper Masala in Shakshuka style...
Ingredients Needed :
Eggs : 3
Onion : 1
Tomato : 1
Cumin Seeds : 1 tsp
Curry Leaves :10-12
Garlic Cloves : 7-8
1/2 tsp Turmeric Powder
1 tsp Red Chili Powder
1 tsp Chicken Masala
1 tsp Black Pepper Powder
Salt to Taste
Oil to Cook
Lets start Cooking :
Heat 1 tbsp of oil in a pan. Once oil is hot, add Cumin Seeds and let them splutter. Add Curry Leaves and Finely Chopped Garlic. Saute till smell of Raw Garlic goes away.
Add Sliced Onion and cook till Onion gets translucent. Time to add cubed Tomato. Cook till Tomato becomes little soft.
Add all powdered masalas i.e. Turmeric Powder, Red Chili powder, Chicken Masala, Black Pepper Powder along with salt to taste. Add splash of water to prevent spices from burning. Mix well and cook till spices will start leaving oil from sides.
Spread the mixture nicely and crack each egg separately leaving some space for them to get cooked. Try to keep bulk intact. Sprinkle pinch of salt and black pepper on each egg.
Partially cover leaving some little space to allow steam to escape and cook for 3-4 minutes.
Our Egg Pepper Masala Shakshuka is ready. Garnish with lots of finely chopped fresh Corianader Leaves and serve hot.
