Almond Broccoli Soup

So winter has finally started setting in slowly in my part of the world and we have been experiencing little cold breeze in the air coming from windows especially in the early mornings. So while we all have started taking our blankets, Jackets and sweaters out, the next things also have started taking grand entries in all the kitchens. These grand entries are known as those sipping hot cups of Coffee and cute cozy super hot bowls of soups. My family is no different and we all love to indulge on those healthy bowls of goodness more frequently.

This Almond Broccoli soup is one of our favorites not just because of all the healthy ingredients used in but also for the amazingly rich and creamy taste and welcoming fresh green color. Very simple to make and also takes so less time in kitchen. So its complete win win for everyone in the family. I can surely assure you that made in all home comfort with all the fresh ingredients, this beauty is surely much more better than what you get in restaurants.


Ingredients


  • Broccoli Florets: 1 bowl

  • Almonds: 10-12

  • Milk: 1/2 Bowl

  • Garlic Cloves: 2

  • Onion: 1 small

  • Black Pepper Powder: 1/2 tsp

  • Salt to Taste

  • Oil to Cook


Preparation


  • Soak Almonds overnight or at least 5-6 hours and then peel them. Set aside to use in soup later.


Let's begin


  1. In a pan, add about 2 tsp of Oil. Once oil is hot add Garlic cloves and saute for 1 minute.

  2. Add chopped Onion and allow it to cook till it turns soft and gets a little pink.

  3. Add Broccoli florets and cook for 2-3 minutes. 

  4. Add previously soaked and peeled Almonds. Saute everything together for a good 2-3 minutes. Add a splash of water to create some steam to help Broccoli and almonds to get soft without any burn marks on them.

  5. Turn off the gas and let the mixture cool down completely.

  6. Once cool, take everything in a mixer grinder jar and grind it into fine paste by adding the required water. 

  7. transfer the freshly ground Almond Broccoli paste back in the pan. Do not turn on the gas at this moment. Add milk to the same pan and give it a good stir to mix it completely with the paste.

  8. Time to switch on the gas flame. Cook the entire mixture for 3-4 minutes by stirring in between to keep it from sticking at the bottom. 

  9. Add Black Pepper Powder and Salt. Add some water to adjust the consistency as you like. Allow everything to boil for 4-5 minutes on low flame.

  10. Switch off the gas, and quickly garnish with Sliced Almonds, small broccoli florets, and splsh of cream if available. Serve hot.
